Vegan Bruschetta With Tomatoes and Basil

Our garden is bursting with Roma Tomatoes, And what a delicious way to eat them.
  
Ingredients
Bruschetta or Organic Sour Dough Bread
2-3 Roma Tomatoes sliced
1 clove Garlic
1/2 red Onion sliced thinly
5-6 Basil Leaves sliced finely
3-4 Tbsp Balsamic Vinegar
Hummus
Himalayan Salt and Pepper to taste 

Instructions 
In a bowl add Vinegar, Garlic, Onion, Basil,Tomatoes, and salt and pepper, Toss well to cover set aside, Pop bread onto an oven tray and drizzle with olive oil or spray oil, Put into the oven on medium till golden brown on both sides, Top toast with a spread of Hummus and tomatoes mixture.  Enjoy!!  =)

Creamy Raw Basil Vegan Alfredo

I was skeptical at first about raw zucchini, But Wow!! what a pleasant surprise, And with this sauce, makes it so moreish you will go back for seconds, if you can fit it :) Found this recipe on the inter webs

Ingredients
2-4 Zucchini 
1 cup Cashews
juice of 1/2 Lemon
2 cloves Garlic
6-7 Basil leaves
1/2 cup Water
Himalayan Salt and Pepper to taste 

Makes enough for 4 people

Instructions
Using a spiral slicer or peeler slice up Zucchinis set aside, Add Cashews, Water, Garlic, Lemon juice to a blender and blend till smooth add basil at the end and blend a little more, To serve, Pour over Zucchini pastaEnjoy!!  =)

Raw Vegan Thai Lettuce Cups

This is a delicious refreshing and satisfying raw meal, It always surprises me how, something raw like this packs so much flavor!

Ingredients 
1-2 cups Walnuts
1/2 cup chopped Celery
1 cup Chopped Carrot
1/2 red Onion chopped
2 medium Red Chilies and seeds (If you like it warmer)
2-4 Tbsp Lemon Juice (I used 1 whole lemon)
2 Tbsp Agave Nectar
1 Tbsp Sesame Oil
1-1/2 cloves Garlic
Himalayan Pink Salt to taste
(and tweak to suit your taste)

Instructions
In a food processor add all liquid ingredients, Mix well and add the rest of the ingredients and "pulse" only, to make sure it has a fair amount of texture to it like ground mince, Serve with crisp lettuce cups and roll up.  Enjoy!!  =) 
  
 

Vegan Caramelised Onion Hummus

                                                                                
So addicted to this, It's a lot cheaper than bought, and you know what's going into it

Ingredients
2 cans cooked Chick Peas
2 smaller Onions
1 tsp Garlic Powder
1/2 tsp Smoked Paprika
2 tsp Tahini
Juice of 2 small Lemons
2 Tbsp Water

 Instructions
Boil up check peas and cool down in cold water, Peel off any loose skins. Slice onions and fry in a small amount of oil till golden and set aside, To a blender or food processor add the chick peas, 3/4 of the onions the garlic powder, lemon juice, paprika, water and tahini and blend till smooth. Serve with the left over onions and a sprinkle of paprika.  Enjoy!!  =)
